Preserving Potatoes without Cold Storage

Dehydrating! Did you know?

🥔Dehydrated potatoes can be used anywhere a fresh potato is used. To rehydrate: cover with water for 15-30 min, let stand, then drain.
🥔Use in casseroles, as scalloped potatoes, or even fried in butter for hash browns.
🥔When using in soups, no need to rehydrate first.
🥔To store: place in Mylar bags or jars with an oxygen absorber. These will keep up to 5 years. 😵🥳

HOW TO:

  1. Wash and shred potatoes.

  2. Boil until limp, then drain and rinse.

  3. Place limp potatoes into an ice bath to cool. Then drain.

  4. Squeeze out excess water with tea towel to remove as much moisture as possible.

  5. Lay shredded potatoes in a single layer on dehydrating tray. Dehydrate at 105* F or 40* C for 12 hours.

  6. Store in mylar bags with oxygen absorbers until ready to use.
