3 WAYS TO PRESERVE STRAWBERRIES
Let’s learn 3 ways to preserve fresh or frozen berries all year round!
HOMEMADE FRUIT ROLL UPS (0:01)
4 cups frozen berries (partially or fully thawed)
2 cups blueberries
2 bananas
1/4 cup local raw honey
1/2 fresh lemon
Fresh spinach (optional)
Play around with recipe. No wrong way to make them!
Blend all ingredients together and spread on dehydrator tray. Place in dehydrator at 110 degrees for 24 hours. If you do not have a dehydrator, this can be done on flat cookie sheets lined with unbleached wax paper in the oven on warm setting (approx. 180 degrees) for 6-8 hours. The oven method’s higher temperature makes the final product no longer raw so it will not carry the same nutrients as the dehydrator method, but it is still delicious and 100% homemade!
Remove from tray and slice into 1 inch strips. Roll and store in an airtight container!
DRIED STRAWBERRIES (3:47)
Remove the green tops using a spoon to scoop off the green only. Once greens are removed, cut into 1/4 inch slices.
Squeeze fresh lemon juice and stir.
Place slices on dehydrator tray and put in at 110 degrees for 24 hours. This can also use the oven method on the lowest/warm setting for 6-8 hours.
Store in a glass mason jar for up to a year. Use as is for a delicious treat in granola, for topping yogurt, or run through a blender to make a powder to add to frosting for a natural pink dye. My personal favorite - added to homemade ice cream!
STRAWBERRY SUN JAM (6:15)
Sun jam contains no pectin. Just 3 ingredients!
4 cups frozen strawberries, defrosted
1/4 cup sugar
Fresh squeezed lemon juice
Allow frozen berries to completely defrost. Drain off juice from thawed berries. Save the juice! It can be added to homemade popsicles, smoothies, ice cream… Strawberry lemonade anyone?
Add sugar to berries and blend until smooth. Pour the puree into a glass baking dish squeezing a bit of lemon juice on top to preserve the bright red color.
Cover with netting and place in the sun. Stir every 2-3 hours until jam is set up scraping anything away from the sides.
Store in an airtight container (linked below) in the freezer for up to 1 year.
